Abstract
Objectives We researched that intake of Kori︱tofu have an effect on lipid metabolism. Methods Forty healthy subjects ingested 18.5 g of seasoned Kori︱ tofu per day for 28days. Serum triglyceride, LDL and HDL︱cholesterol level were recorded. Results Intake of the Kori︱tofu increased serum HDL level, that resulted in decrease Arteriosclerosis Index. In subjects who have highly serum triglyceride level, intake of the Kori︱tofu tended to decrease serum triglyceride level of the subjects. Conclusions Intake of Kori︱tofu improve lipid metabolism, that prevent arteriosclerosis.
